Golden Mashed Potatoes

¾ lbs yellow potatoes
½ cup green pepper cut into 1 inch pieces
1 Golden Delicious apple, cored and cut into 1 inch pieces
½ T butter
Salt and pepper

Cut potatoes into 1 inch pieces (do not peel). Place in a sauce pan and cover with cold water. Cover and bring to a boil. Reduce heat and simmer 15 minutes. Add green pepper and apple and continue to simmer 5 more minutes or until potatoes are soft. Drain. Mash the potatoes and vegetables through a potato ricer or food mill. Mix in butter and season with salt and pepper to taste.
