Baked Squash Ring

  • 3 cups summer squash
  • 1/4 cup melted butter
  • 1/4 cup milk
  • 3 eggs, well beaten
  • 1 tsp salt
  • pinch white pepper or dash hot sauce
  • 1/4 Italian bread crumbs
  • 1/4 cup minced onion

Wash and dice unpeeled squash. Steam until tender and optionally, put through a blender or mill. Add other ingredients and blend well. Turn into a well buttered casserole dish (1.5 qt but just adjust cooking time if a different size). Set pan in a larger pan of hot water and bake at 450 degrees (sometimes I skip this and bake at 350. Bake until knife comes out clean.
